Ingredients


Makes: 8 – 16 squares
  • 6 eggs
  • 2 Tbsp (30 ml) Spinach Dip Mix
  • 1/4 C (60 ml) dry breadcrumbs
  • 1 small onion, diced
  • 1 can (14 oz/398 ml)artichoke hearts, drained and chopped
  • 1 C (250 ml) grated low-fat cheddar cheese
  • 2 Tbsp (30 ml) grated Parmesan cheese

Preparation


 
  • Preheat oven to 325° F (165° C).
  • Lightly spray 8” (20 cm) pan with vegetable oil.
  • Whisk eggs with Seasoning for Spinach Dip.
  • Stir in breadcrumbs, onion, artichokes and cheddar.
  • Spoon into prepared pan. Sprinkle with Parmesan.
  • Bake for 30 minutes, or until firm. Serve hot or at room temperature.

Tip: Serve with a side salad and prepared Epicure Dressing.
